The Dallagiovanna Difference

Today, we’re the only modern-day mill using the washing process of the wheat. While other companies have stopped using this process because they feel it’s too time consuming and unnecessary, we believe this level of quality is non-negotiable and this process is something we will never stop doing.

Why are we the only ones who still wash our wheat?

Wheat can be prone to flaws and impurities, which is why most mills will clean their wheat prior to grinding it. What few know is that there are different methods to clean it.

We ensure the right softness

At Molino Dallagiovanna we wash our wheats with running and drinkable water; the moving currents allow us to clean our wheat from impurities such as dirt and debris, while at the same time conditioning it and softening it, simplifying the milling process. Hydrated wheat then yields clean, soft, and hydrated flour.

The result? Baked goods that are on a whole different level.

We preserve the color and the aroma

Thanks to the combination of washing the wheat and slow and cold milling, our flours are whiter and their aroma is a true wheat aroma. So when the flour bag is opened, the color isn’t gray, it’s white and the perfume won’t smell like a paper bag but wonderful wheat!

After-sales service

In our baking laboratory the flours are tested by our in-house technicians and leading by the Best Schools in Italy such as Cast Alimenti and by the sector’s leading experts such chefs from around the World who, as a result of their art and experience, are essential to the continual improvement of the production.

Technical support to our distributors through tasting, stages with our technicians in our laboratory or in their countries, technical assistance to the clients, is pivotal to help them developing a culture of high quality original Italian products.

In addition to collaborations with schools and technical support to our customers, the presence at National and International fairs and events with our testimonials is essential for the knowledge of our product.
